If you have an induction cooktop, all-aluminum pans like our top pick runner-up won’t work. It’s best to use a skillet with an enclosed bottom. The Ozeri 10-Inch Stainless Steel Pan has Nonstick Coating. We like it because it does all of the above. The pan has an easy-to-use surface with a bent lip and wide flared sides. It also comes with a convenient handle. You can even evenly spread heat on the cooking surface. To be precise: Although encapsulated cookware works well with induction stoves, we do not believe it is the most suitable for radiant heat cooktops such as electric coils, gas and glass. The reason is that radiant heat often causes overheating to occur on the pans’ sides. This can lead to hot spots. Hot spots are more likely to cause the coating’s nonstickiness to deteriorate faster. Note that this Ozeri pan came with the black coated nonstick coating. Amazon’s reviews suggest that there’s a third version of Ozeri’s pan, which has a bronze coating. This is not as durable. Whitford Eterna coatings, both in black and white, can also be used. The company states in its PDF fact sheet that all PTFE interior coatings should use darker colors.
