What We Tested: 72 lines of cookware were tested by the Kitchen Appliances & Technology Lab. It was important to see how skillets distribute heat when using electric or gas stoves. We also looked at the quality of their steak-browning abilities. It was important to see how pots held a steady heat and didn’t scorch when they were heated. We also tested nonstick cookware to see how they released eggs and made pancakes.
